考古和科学研究表明,建盏龙窑烧成温度普遍较高,通常在1300℃以上。在如此高的温度下,如果茶杯采用厚底薄口的设计,烧成过程中杯沿在高温下容易变形,导致杯形不圆。

这样,建盏的釉就会粘在烧制容器上,增加了残次品率,增加了烧制成本。

大型建盏的制法,通常在拉坯时,会在杯沿处加一圈稍厚的箍圈,以增加杯沿的强度,减少烧制过程中变形的可能性。

这种处理口沿的技法在唐代已有,相应的碗、杯造型多为“口沿-唇沿-壁沿-底”的造型。进入宋代后,这种处理技法得以延续,杯足略有变化。

但这类茶杯,在拉坯后需要修整口沿外壁凸出的部分,使其平整,才能上釉烧成。而包口设计,在拉坯过程中,可以用手工将茶杯外壁的凹凸凹槽塑造成型,减少了修整的需要,提高了生产效率。

建盏“指槽”最关键之处,在于其包口槽的形状为弧形环状,使胎体在靠近口沿处形成预应力结构,在高温烧成过程中,口沿不易变形,从而提高成品率。

而圆口茶杯,正如宋应星在《天工开物》中所描述的,“盛茶时,手感略重,烧成后,口成凹形,不再圆整”。

缠口线与宋代浸茶法有何关系?

“一茶块相当于一钱(古代中国重量单位),用勺子量取。先将热水倒入茶杯中,搅拌均匀,再加水,以画圈的方式再次搅拌。可以浸泡四圈,然后停止。”

蔡襄在《茶录》中是这样描述泡茶过程的。

可以看出,茶叶浸泡在水中时,水位并未达到边缘。如果像一些研究人员所说的那样,水位达到“水线”,那么“以圆周运动搅拌”就不可能实现。

因为如果茶杯中的水位过高,当以圆周运动搅拌时,水不可避免地会在茶杯的中心形成漩涡,形成一个空心的锥形空间,并且越往边缘液位越高。在离心力的作用下,靠近杯沿的液面会上升,甚至溢出、溅出杯外,因此蔡襄认为“茶可浸四遍而止”。

宋徽宗《茶论》中记载的浸茶方法,一共七次注水。随着注水次数的增加,茶筅的搅动速度逐渐减缓。整个过程中,浸茶人要不断用筅搅动茶叶,观察茶汤色泽,并控制七次注水的间隔和用量。

因此,如果宋代的蘸茶方法采用这种束口茶杯,那么“水线”的说法显然是一种推测和误解。

建盏因施有结晶釉,表面光滑,且具有很强的防水性,因此在倒入热水泡茶或冲茶时,水很容易沿着光滑的杯壁流淌,导致茶水容易溢出。

同样,蘸茶时,用茶筅快速的圆周搅拌也会导致靠近杯壁的茶水液面上升,容易洒出。束缚式的口线大大避免了此类意外的发生,使茶水的搅拌保持在可控的范围内。

因此,看来绑扎的口线的主要作用是防止溢出。这条口线不应该被称为“水线”,而应该被称为“防溢线”。

综上所述,建盏的包口设计非常精妙,其好处有很多。从成本控制的角度看,它减少了制陶过程中修整口沿的需要,从而提高了生产效率。从烧制工艺的角度看,由于其特殊的弧形结构,减少了口沿在高温烧制过程中变形的可能性,提高了成品的良率。从使用角度看,它可以防止泡茶时茶叶洒出,是一项贴心的设计。
